Black Bean Soup Recipe

Black Bean Soup

3 Slices of Bacon (optional) If you’re not using bacon, use 1 Tbsp of Olive Oil

1 Medium Onion, Diced

½  Small Carrot, Diced

1 Red Pepper, Diced

4 Cloves of Garlic, Minced

2 15oz Cans of Black Beans, Drained

4 Cups Chicken Broth or Vegetable Broth

1 tsp Cumin

1 tsp Paprika

1 tsp Hot Sauce

½ tsp Chili Powder

½ tsp Oregano

Salt and Pepper to taste

Garnish

Sour Cream

Cilantro

Directions

Place bacon in pot and cook on medium heat until crispy. Remove bacon from pot and add onions to pot and sauté until onions are slightly caramelized. Add carrots, pepper and garlic to pot and sauté for three minutes. Pour in beans and broth and bring to a boil. Add all of the spices and mix well. Turn heat down to medium-low and let cook for 35 minutes. If using bacon, while soup is cooking, chop bacon. Once soup is done, mash some of the beans to thicken the soup. Share soup and garnish and top with bacon.
