Lemon Cream Sauce for Lemon Cream Chicken Pasta Youtube video

Since operating the Skylight Cafe at the YWCA in Greenwich, CT, CDB Kitchen has had daily specials on most days. On September 21, 2017, it seemed like a perfect day to add a fun creamy with a hint of lemon pasta dish. Pasta, I think is the ultimate comfort food. It is for me anyway. What I love about this dish is, you can make it your own. Add all the veggies you’d like or different types of meat, like shrimp and/or sausage. Whatever floats your boat, goes. For the cafe, we, happened to add chicken, ham and peas. For the video, Yazland and I added chicken, peas and tomatoes. Have fun with your creations. To tell you the truth, you don’t even have to use this sauce with pasta. You can make it a protein rich meal or add it to rice. The sky is the limit. Write me @ chefdarleneb@gmail.com and let me know all the ingenious ways you have used this sauce recipe. The most important thing is to have fun. Until next time, have fun in the kitchen.

Light lemon cream sauce

1 tbsp butter, salted
1/2 onion chopped
2 cloves of garlic, finely diced
2 cups vegetable broth
1 tsp chicken base
2 tbsp fresh lemon juice
1 cup half and half
1/2 cup heavy cream
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 tsp basil
1 tbsp corn starch
1 tbsp water

Warm large pan on medium high heat. Add butter to pan and melt. Once butter is melted, add onions and garlic to pan. Sauté until onions are translucent. Add vegetable broth and turn heat up. Bring to a boil. Add chicken base and fresh lemon juice. Turn heat down to medium. Add rest of ingredients except for cornstarch and water. Let simmer for 5 minutes. Mix cornstarch and water together and add to sauce. As soon as sauce becomes a little thick, sauce is finished and ready to be served.
