I believe delicious doesn’t have to mean painful. This past weekend it was my turn to bring the Praise and Worship meal at my church. I wanted to bring a dish that was delicious and nutritious that didn’t have me stuck over the stove the whole day and would feed the entire team. If you know me, then you know that I love spicy food, but when I am cooking for others, I am very conscious of my clients likes and dislikes. I didn’t think hot and spicy would go over very well. Anyway, I digress…. Food, Quick, yeah, I remember. My worship leader asked me to bring something light. I thought to myself, let me make a very easy pasta salad that is full of vegetables and flavor.

Painless Pasta Salad

36 Oz Tri-color pasta (cooked al dente)
12 oz Feta Cheese (crumbled)
10 oz Grape tomatoes (cut in half)
5 oz Black olives (sliced)
1 bag Baby Spinach
1 Cup favorite Italian dressing
Salt and Pepper to taste

Mix well and enjoy!

This salad can be jazzed up even more very easily, you can add grilled shrimp, chicken or portabella mushrooms and roasted veggies (for my vegetarian friends). The possabilities are endless. Play around with the recipe and let me know your results.
